Vegan salad with quinoa

Ingredients

  • 1 cup quinoa
  • 2 cup water
  • 1 cup diced peppers (red and green)
  • 1/2 cup cranberries
  • 1/2 sliced avocado
  • 2 tbsp. chopped scallion
  • 2-3 tbsp. sunflower seeds
  • 2 tbsp. lemon juice
  • 3 tbsp. Unfiltered extra virgin olive oil Karpea (source of Vitamin E)
  • Salt
  • Black pepper

Execution Method

  1. In a small saucepan, boil the quinoa.
  2. Once the water has boiled, lower the heat and let it simmer until all the water is absorbed.
  3. Allow the quinoa to cool before making the salad.
  4. Add all the ingredients in a bowl except the avocado and olive oil and mix well.
  5. Garnish with 5-6 slices of ripe avocado.
  6. And finally, we take the flavor to the next level by adding the unfiltered extra virgin olive oil Karpea (source of Vitamin E)
